In the Kitchen

This is not a kitchen but this beach is only five miles away from the kitchen the following post refers to

A strange spell has come over me: for the past two weeks, not only have I prepared food in the kitchen but I’ve actually liked it. And I’m not just talking about the basics of feeding myself, which revolves around cereal and yogurt, cereal and milk, fruit, nuts, tossed salads, scrambled eggs, and various dips with vegetables or bread. I’m talking about using the food processor, the oven, and the stove-top, sometimes two or more at the same time.

I have to give some credit to the local farmers market for providing me with delicious-looking produce every week and inspiring me to try cooking new things. And even though life is busy, perhaps I’ve been feeling slightly more relaxed as I think about my upcoming summer vacation. (Cooking, not that I do it regularly, is definitely not something I undertake while hungry, tired, or stressed.)

So, for anyone out there like me who loves food but has a weird aversion to actually preparing it herself, here are some of the things I’ve prepared recently that actually tasted good and were easy to pull together:

-Pesto
-Chilled peach soup with blueberries
-Roasted chickpea and olive salad
-Quinoa, lentil, and feta salad
-Orange beets with goat cheese, olive oil, green onions, and walnuts
-Pie

I also tried to make “healthy” banana bread which didn’t turn out since I was missing a few important ingredients and I didn’t really follow the recipe. I’m still intending to transform it into banana bread pudding one of these days, though. (The “bread” is currently in the freezer so I have time.)

Okay, I have to admit that before I started this post, I thought that I had made a few more dishes but at least there’s some variety!
